I grew up in Iowa farm country. My father and a partner had 300 head of polled hereford beef cattle. I grew up eating some of the best beef in the world. My job has taken me to large cities all over the country. In my travels over the last 12 years I have witnessed beef become very bland and tough. The gen-pop wants cheap beef. This is a mistake in my opinion. Cheap beef makes ok chili and a few other things but is very disappointing otherwise. Ask your local grocer if his beef is "choice" or "prime"? Ask your local grocer how long his beef is aged? You'll find them stuttering, lying and making excuses most times. If you want truly great cuts of beef, fish, pork, lamb or otherwise, Go see Gary!
