Beer Cheese Soup Recipe

I don't know if Wisconsin has an official soup, but if it did, it would be beer cheese soup.  As a newbie Wisconsinite, I don't have a tried and true recipe, so browsing all the options was a bit overwhelming.  I had to decide on the type of cheese, type of beer, and if I wanted to include add-ins from bratwurst to butternut squash. I settled for a combo of cheddar and swiss- cheddar for the flavor and swiss for the creaminess.  For beer, I picked a local brew of course.  I chose a recipe with some carrot, green onion, celery and potatoes, because let's face it, we all need to eat our veggies and it is easy to get in your daily requirement when they are swimming in cheesy goodness.  Do you have a favorite beer cheese soup recipe? Click continue reading to see my recipe.  Wisconsin Beer Cheese Soup with VeggiesAdapted fromWisconsin Cheese Chowder Recipecourtesy of the Wisconsin Milk Marketing BoardIngredients:Cooking Spray3 cups diced carrots1 cup slice celery3/4 cup chopped green onions4 cups peeled, diced round red potatoes (about 1 1/2 pounds)1 can low sodium chicken broth1/3 cup flour2 cups Milk1/4 teaspoon salt1/4 teaspoon white pepper1/4 teaspoon ground nutmeg3/4 cup Wisconsin beer*1 1/2 cups shredded Wisconsin Sharp Cheddar cheeseRecommended:Babcock Hall Dairy Sharp Cheddar Cheese1/2 cup shredded Wisconsin Swiss cheeseRecommended:Babcock Hall Dairy Baby Swiss CheeseSteps:1. Coat a large pot with cooking spray and place over medium high heat until the pot is hot.2. Add carrots, celery, and green onions and cook for 8 minutes stirring occasionally.3. Add potatoes and chicken broth and bring to a boil.4. Once the soup is boiling, reduce the heat and simmer for 25 minutes or until the vegetables are tender.5. Place flour in a bowl. Gradually add milk while whisking with a wire whisk.  Add to pot.6.  Stir in salt, pepper, and nutmeg.7. Cook 2 minutes or until thickened.8. Add the beer, cook 1 more minute.9.
