Holiday Prep Help

As I have a large family  I would help my mom . She would cook and bake for 50 family and friends the day before, all inless than one day.  CRAZY is all I can say!   You can cut that cooking time down by prepping things that need to be chopped early. The key is using the right size container and making sure the seal is sealed!  Very important that seal is.  Anywhere from 3-4 days out you can chop all your onions  for example, that you will need for dressing, potato salad or anything else you might use them for. If i had this growing up to use, many Christmas dinners would have been on time.  I am able to chop to any density you need.  Therefore, you can chop fine for potato salad or coarse for dressing, whatever you desire.  To keep them fresh without them wilting or starting to wilt.  I use small bowls.  If I have them all chopped the same I will use a Tupperware Microwave Cereal Bowl or the Snack Cups (which are a perfect 4 oz. size).  Either way I know that my prep is in an air tight container and there is not a lot of space between my food and the seal.  You want to pack it full, forcing the air out means your food is fresher longer!
