Having moved here from Southern California, I was looking forward to some blintzes and would you believe for a deli they weren't even on the menu! I ordered falafel, they didn't have that. I ordered chopped chicken liver and they didn't have that. My fiance ordered potato latkes and they were more like matzo meal pancakes. People next to us ordered tuna and they didn't have that. Spices and Chipotle Peppers

I have recently discovered the many uses of Chipotle in creating my personal new blends. This month at Mothersauces we are featuring Chipotle as the spice of the month.. In talking shop with several customers who have grilled and smoked meat for many more years than me, I learned that Chipotle is a very flexible spice with combinations of brown sugar, garlic powder, ginger and tarragon. I also didnt realized that Chipotle peppers are used in just about all Tex-Mex blends, if you've been afraid of trying chile peppers in your food, Chipotle is a great pepper to get started with because of its smokeness and "slow burner" affect. I call the slow burner as the spice that causes heat felt on the tong to slowly "tingle" not burn like using Cayenne. So knowing how Chipotle works you can imagine the infinite amount of combinations you can create using Chipotle as an ingredient for a blend.
