The Problems With Fructose
What is the ingredient in our food that is rapidly turning into fat in our bodies? Fructose, and it is hard to avoid. High fructose corn syrup is found in most processed foods – cookies, crackers, chips, salad dressings; even fruit juices and soda. In fact, because it is a cheaper alternative to sugar, it is hard to find processed foods that do not contain high fructose corn syrup (HFCS). A study done at the University of Texas Southwestern Medical Center and published in theJournal of Nutritionfound that the body rapidly converts fructose into fat. The liver decides how the body will use dietary sugars; when it encounters glucose, it decides whether it will store it, burn it as energy, or convert it to triglycerides. When fructose enters the body, it completely bypasses this process and floods the bloodstream, quickly converting to fat. HFCS accounts for the largest amount of calories in the American diet, and Americans consume about 12 teaspoonfuls of it per day. Besides rapidly turning to fat, high fructose corn syrup is also linked to: diabetes accelerating the aging process wrinkling of the skin collagen damage generating uric acid (contributes to gout) metabolic syndrome liver disease increased inflammation increased cellulite "beer belly" increased triglycerides hypertension increased cancer risk As if these problems weren't bad enough, a report in theJournal of Environmental Healthshowed that almost half of tested samples of commercial high-fructose corn syrup contains the neurotoxin mercury, which is a result of the production process. With every can of diet soda you consume each day, you increase your risk of becoming overweight by 41 per cent! It may not seem crazy that drinking something with no calories and no carbohydrates can make you gain weight, but after many years of research, we now know the reasons why. Our bodies have been programmed to have a "biological cascade" of reactions when we taste something sweet, called the cephalic response. When the body tastes something sweet, it releases insulin (the "fat" hormone, which stores sugar in the bloodstream), and gets ready for the carbohydrates it thinks it is about to receive. When it doesn't get the carbohydrates, it causes the blood sugar to drop and also causes the urge to overeat because the stomach was expecting food and calories. Insulin is released whether or not carbohydrates are received by the body, and this release of insulin tells the body to store fat. Fat cells have "key codes" that open them, one of which is the glycemic index of the food. LPL (lipoprotein lipase) is the "gatekeeper" of the fat storage of the fat cell and is triggered by high-glycemic foods. When the fat cell is triggered, it opens up and lets fat in, then fat cells get bigger and start dividing. The key code is also opened up by insulin, which is triggered by the cephalic response – diet soda triggers the insulin to be released; so do all foods that have no calories or carbohydrates. Consuming foods and drinks that do not contain calories and sugars may actually make it almost impossible to lose weight! Researchers have even found that when the diet soda was swished around in the mouth and then spit out causes the cephalic response. Artificial sweeteners turn on the cephalic response because our modern brains have never tasted something so sweet; artificial sweeteners are 400-600 times sweeter than regular table sugar. Even something as seemingly natural as Stevia has proven to cause the cephalic response! So if you find yourself having trouble shedding the pounds, try regular soda instead of diet; if you have to sweeten coffee, tea, etc., use regular table sugar, and try to consume a little protein with your carbs – it will help glucose levels stay more consistent, you will have more energy for longer periods of time, and you feel fuller for longer.
