FIRST OFFICIAL DAY OF SUMMER-LET'S BBQ!!!
June 21st marks the first official day of summer. (Although with the heat we have had here in Colorado, you would think it started weeks ago!). Did you know that you can cook more than just steaks and burgers on your grill? Many customers come into our store here at Colorado BBQ Outfitters saying they only have a gas or charcoal grill. So? You can BBQ on those just as well as a high end wood pellet grill. The trick is simple. You just need something that can keep the temperature constant. That's it. If you can regulate the heat in your grill, you have it made. It's that simple. Then customers ask me, "but Dan, how can I smoke on my gas or charcoal grill?" Again, it's simple. You just need to add wood chips or chunks while BBQing. There are many products on the market and that we carry here at Colorado BBQ Outfitters than can help you do that. Smoker boxes are the most popular. Soak your chips or chunks for about an hour in water, then add to a smoker box on your grill. Better yet, put it near your heat source such as directly on the burner. Viola! Again,that simple. The soaked wood will smoke slowly giving your food a smoky flavor. For charcoal users, just throw the wood chunks directly on the coals. Same thing. Remember, the key to BBQing (by the way, BBQing is cooking low heat for a long period of time and grilling is cooking on high heat for a short period of time) is to keep your temperature constant. Yes, we carry Polish kielbasa (also called Polska kielbasa) you have been longing for! …ok, I know that you may say there is no specific sausage called kielbasa, and you're right because every family has its own recipe. Kielbasa is the Polish word for sausage. Almost all sausages in our meat department are called kielbasa, but not all kielbasa from our meat department are Polish. There's only one sausage that can rightfully carry the word Polish in its name and that's the Polish Smoked Sausage. Polska Kielbasa has been brought to America by some of its first immigrants. The recipe of the famous Smoked Polish Sausage is simple and has been known for centuries. Kielbasa Polska has been always made from meat (consisting mostly of pork in most recipes; that usually means ¾ pork and ¼ or less of beef), garlic, salt and pepper.
