How to Candy Fruit
Candied fruit is an interesting and sweet way to enjoy different types of fruit. It can be used in cookies, cakes, as a garnish or as a chocolate dipped treat. It may sound complicated, but you can easily candy your fruit at home if you use the proper technique.
- Pick the fruit that you want to use. Fresh cherries, pineapple, grapefruit peels and lemon or orange peel are a few fruits that work well for candying.
- Cut it into bit size pieces and then set it aside.
- Mix one cup of white sugar and one cup water in a medium sized pot.
- Bring it to a boil so that the sugar is dissolved and then let it cool.
- Put the peels into another pot of cool water and then bring it to a rolling boil to blanch them.
- Immediately take the fruit from the boiling water and drain it in a colander before putting it into a pot of fresh water again to repeat the blanching. Do this 1 to 3 times for orange peels and up to eight times for grapefruit peels.
- Test the peel by tasting it to see if it is tender.
- Put your fruit into the pot with the syrup and bring it to a simmer.
- Simmer the fruit for roughly 30 minutes.
- Remove the pot from the stove and let it cool.
- Drain the cooled fruit and then roll it in sugar.
