How to Candy Fruit

Candied fruit is an interesting and sweet way to enjoy different types of fruit. It can be used in cookies, cakes, as a garnish or as a chocolate dipped treat. It may sound complicated, but you can easily candy your fruit at home if you use the proper technique.


  1. Pick the fruit that you want to use. Fresh cherries, pineapple, grapefruit peels and lemon or orange peel are a few fruits that work well for candying.

  2. Cut it into bit size pieces and then set it aside.

  3. Mix one cup of white sugar and one cup water in a medium sized pot.

  4. Bring it to a boil so that the sugar is dissolved and then let it cool.

  5. Put the peels into another pot of cool water and then bring it to a rolling boil to blanch them.

  6. Immediately take the fruit from the boiling water and drain it in a colander before putting it into a pot of fresh water again to repeat the blanching. Do this 1 to 3 times for orange peels and up to eight times for grapefruit peels.

  7. Test the peel by tasting it to see if it is tender.

  8. Put your fruit into the pot with the syrup and bring it to a simmer.

  9. Simmer the fruit for roughly 30 minutes.

  10. Remove the pot from the stove and let it cool.

  11. Drain the cooled fruit and then roll it in sugar.
