Saturday, April 7, I stopped by this place around 7:30 pm to place orders for4 friends plus one of my own. Walked up to the woman behind the bar and asked if this is where you order takeout. Without looking at me, she placed a menu in front of me. There was no one at the bar but me. I told her I asked if I could pay for each order separately. She said "give me the first order". I proceeded. One of my friends had asked for no rice or beans (arroz or habichuelas) in her order. I told her this and she snapped "I don't know what you mean by habichuelas". I remembered that in Central America they are called frijoles, apologized and told her I meant frijoles. I noticed one of the receipts showed a taco with loroco. My friend had asked for a cheese taco so worried that I wasn't getting the right item, I asked what "loroco" meant. Again she snapped "those are the only tacos we have!" When I finished placing my order I asked whether she's always this pleasant to customers. She looked at me and walked away. I asked to speak with a manager who kept whispering that "yeah, they've had complaints about her before and will speak to her but I could tell he was giving me lip service. When my order was ready, she placed the bag in front of me without a word. I asked if all was in the bag, and she told me one order was missing. I grabbed my two orders and eventually left. To my horror, I discovered that she had forgotten my own order. I went back and without looking at me, she motioned to another staff member to give me my order. Frustrated at this point, I told her that I simply wanted my money back. She gave me back $5. My order was $5.35. I told her I needed my change and she proceeded to grab a roll of penny and start counting, ready to give me 35 cents in pennies. By this time I had it and told her that if she gave me 35 pennies I was going to make her swallow them. She said "well, I have no change" so I told her that's not my problem so the other staff member gave me the 35 cents and I left. Driving back I kept thinking how can a customer simply walks into a business to spend their hard earned money and get treated in such a way with absolutely nothing to provoke it! What's more disappointing was the attitude of management. I think the woman must be the owner, a relative or something because a) she was not in uniform which is usually a sign and b) how she kept being rude to me in the presence of the manager on duty. As luck would have it, I went around the corner to a place called Taco Loco where I was immediately greeted by two young ladies with big smiles and the pupusas were actually 50 cents cheaper than at Cancun! Kitchen Exhaust Hood Proper operation and maintenance

Maintaining your kitchen Hood system is easy if you can control it from the start The volume of business and type of food you cook plays the cards as to how you will have to pay proper attention to each hood system Which would think would have more of a mess on the roof; a hood having a batterry of 4, 60lb. fryolators would be a greasy mess on the roof. Versus a hood over a 5 ft grill that was used to cook steak sandwich meat. I can tell you probably along with thousands of retaurantuers that the fryer fan will be less messey.The Type of grease and the operation of the system are different than the hood with the grill. The grill cooks raw cold meat and the water content turns into steam and carries Lard animal fat through out the system into the fan anf the grease having a different characteristic than the grease from a fryer (also containgg animal fat but was cooked in vegetable oil and the oil in the fryer keeps the fat from the chicken in it and it pretty much stays in the oil and you can see that the oil breaks down easier over time. But the grease is of a different Dry consistency. Dailey the hood system filters should be removed and washed in the dish washer or soaked in a solution of degreaser (aluminum filters will tarnish badly if soaked in alkaline or corrosive chemicals such as sodium hydroxide etc.) All stainless filters will not and will hold up to aggressive chemical soaking or washing .   If you have a pressure washer your can do  a better job when rinsing off after a soak time. This will keep grease from building up an redused the total cleaning time and or build up on the rest of the Hood ductwork and fan. Some restaurants may require a newer type high effeciency filter that will pull more grease out of the air flow at the filter . Grease moves quicker and rides through your ventilation systems on molecules of stem vapor so if you saute alot or cook alot of raw vegetables and meat on the grill or char broiler the grease will collect on stem molecules and ride them tothrough out the system very fast . ( so high efficient filters can remove some of this grease quickly from the exhaust air steam. Grease will flow all the way up to the fan through the duct work ,Inspect the fan weekly so you can be the judge how effective the high efficient filter are doing.
