I once purchased the Seven-flavor pound cake through Amazon.com a few years back. It took over a month to receive, at first I was under the impression that some things had gone on and the cake would eventually be baked and mailed. When I eventually received the cake by Priority Mail, it was evident that the cake was not freshly baked. It was dried out, could not be sliced, and was falling apart. It would be embarrassing to serve it at any function. I truly believe it sat around for a month and then charged me Priority Mail prices. When I tried to track the delivery with the contact phone number, I apparently woke some man who switched the call over to a fax line. They should not ship cakes if they can't ensure it will be a quality product when received. ...read more

The Hummingbird Cake

The Tale of the Legendary Hummingbird Cake We just love talking about great cakes, pies and other desserts. The main thread in most of these conversations is the origin, and founders. Who were they? What were that like? How did the recipe come about? What era were these founders living in at the time? So, we thought we'd share some of these interesting stories with you. At Dessert.net Cafe, one or our favorites is the Hummingbird Cake. This story couldn't have been told any better. So with all due respect, to give the Legendary Tale of the Hummingbird Cake we are using an exerpt from article by MyGenie. Southern Living magazine generally is credited with the first reference to the Hummingbird Cake. It published the recipe in its February 1978 issue, submitted by a Mrs. L.H. Wiggins of Greensboro, N.C. But Mrs. Wiggins did not include an explanation of the cake's unusual name, which remains a mystery however folklore has it that the hummingbird is a symbol of sweetness. It's a southern delight that gives you the essence of the tropics with it's bananas and crushed pineapple. Restaurants from the east coast to the west coast have made this delightful cake for it's southern transplant customers. The cake has won many awards, The Kentucky Derby Cook Book[Kentucky Derby Museum:Louisville KY, 1986] contains a recipe for Hummingbird Cake on p. 204.A note printed in this book states "Hummingbird Cake. Helen Wiser's recipe won Favorite Cake Award in the 1978 Kentucky State Fair." Cooks in 1978 baked the cake when they had over ripened bananas, the perfect way to use the bananas.The recipe and the cake has many names: Never Ending Cake is the name turned in by Pauline Isley. A Benton respondent supplied Jamaican Cake, a title that might not be far afield considering the ingredients. Ella Sheets knows it as Granny's Best Cake. Nothing Left Cake is the name supplied by Patricia H.
