Adding fat and sugar to the chocolate makes dark chocolate. Milk chocolate starts with the sweet chocolate, but milk powder or condensed milk are added giving a creamy texture. White chocolate is created with a mixture of coco butter, milk solids, and sugar, there is no coco solids added to white chocolate.  Semi sweet chocolate is dark chocolate with a lower sugar content.  Bittersweet chocolate is chocolate liquor with some sugar added.
