Chef Anna Cooks!

I purchased a gift certificate for my parents from Chef Anna Cooks for 4 weeks worth of meals (5 dinners per week) and I can honestly say it was the worst money I ever spent. She came for two weeks and did not show up for the 3rd week. They heard from her two days later explaining that she had been sick. Now, that is a bummer, but to just not show up without communicating is unacceptable. Chef Anna does the meal planning AND the grocery shopping, so this left my parents without dinner groceries and without a plan. The next week, she was a no-show again. At this point, we had all had enough and I told Chef Anna that we no longer wanted her services and I asked for a refund of half the gift certificate. She refused, so I am out over $500, but I would rather that be the case than risk Chef Anna not showing up yet again and leaving my parents with no plan and no groceries for dinner. I highly recommend you look elsewhere if you are looking for a personal chef. ...read more

Metro Coffee is on the steps of the University of Washington - Tacoma campus in the historic Tioga Library Building. It’s a funky little place with good drip, espresso, tea, pastries and sandwiches. With bicycles hang from the ceiling and student art on the walls you’ll feel right at home if you are a current student or a student of yore. The furnishing will remind you of your first apartment or a cash strapped Greek house: worn, low and soft. The elderly must take care, for retrieval by the fire department may be needed in some instances. Making their customers feel at home is something they do at Metro Coffee par excellence. Every day is old home week at Metro as the staff makes an effort to reach out to each customer and let them know one is genuinely important. This is not corporate America. There is nothing slick or presumptuous here. It is fun, friendly and warm. Once you go to Metro the atmosphere will draw you back over and over. Not to mention the very fine coffee, tea and food items which the staff works hard to make just the way you like them, every time. So is the place perfect? Not so much. They seem to have a blind spot when it comes to understanding customer needs beyond a great cup of coffee. They don’t post their business hours; evidently one is to be clairvoyant. Their signage is poor for those attempting to find the place for the first time. It is impossible to tell if they are open when driving by or casually even if parked. They don’t offer a loyalty program, run specials, issue coupons or seemingly make any effort to reward present customers or attract new ones. They may be able to get away with this because of their location on campus, but I imagine this doesn’t fly well for the person on a tight schedule from the neighborhood. Wrapping up my thoughts: Metro Coffee has good products and service but exhibits a lackadaisical interest in customer needs. I want to be very respectful. Our waitstaff was great on Christmas Day. We were one of the first to arrive at the 5:pm reservation. My mother & I waited 11/2 hours for our meal. Wow, the profit margin was high & it showed! $40. for the lamb 2 grouped medialins & approx. 1/2 cup burnt vegies. I so very much wanted to like this place! I was ready to buy several gift cards. I went here last week for a family birthday party, so we had a larger party. The server hardly paid attention to us the entire time we were there! It took a full 15 minutes just to get drinks then he left and didn't even take our order! When we did finally get to order we didn't see our food for another hour. The food was super expensive and luke warm by the time we got it. I got yellowtale entree and it litrally tasted like burnt wood. Awful! I had to ask for refills on my drink because he would offer it to only one or two people out of our party at a time, and the server completely ignored one of the people in our party. Easy and Delicious Kung Pao Chicken Recipe

Kung Pao chicken is a classic Sichuan style dish.  the dish is rumored to be named after Ding Baozhen, a late Qing Dynasty Offical.  Ding served as head of Shandong province and later as governor of Sichuan province. His title was Gōng Bǎo, or palatial guardian. The name "Kung Pao" chicken is derived from this title. Ingredients:   2 lbs. chicken thighs, boneless, skinless, cut into cubes 1 1/2 Tbsp. dry Sherry 1 1/2 Tbsp. Cornstarch 3/4 Tsp. Salt 1/4 Tsp. White Pepper 5 Tbsp. Olive Oil (divided use) 6 Red Chile, Dried, Whole 1/2 C. Peanuts, Salted 1 1/2 C. Broccoli Florets 2 Garlic Cloves, minced 1 1/2 tsp. Ginger Root, minced 3 Green Onions, Sliced   Cooking Sauce: 4 Tbsp. Soy Sauce 2 Tbsp. White Wine Vinegar 2 Tbsp. Dry Sherry 6 Tbsp. Chicken Broth 4 Tbsp. Sugar 2 Tbsp. Cornstarch   Directions:   In a bowl combine the sherry, cornstarch, salt, and white pepper.  Add cubed chicken and stir to coat it.  Stir in 1 Tbsp. of the oil.  Set aside and let marinate for 15 minutes.   Cooking Sauce: In a bowl combine soy sauce, white wine vinegar, sherry, chicken broth, sugar, and cornstarch.  Set Aside.   Heat wok or large sauté pan over medium heat.  When pan is hot, add 1 Tbsp. of the oil.  Add the red chilies and the peanuts.  Cook, stirring, just until the chilies start to brown (be careful not to burn them).  Remove from pan.   Add 1 more Tbsp. of oil and sauté the broccoli until tender-crisp.  Remove from pan. Add the remaining 2 Tbsp. of oil and raise the temperature of the heat to medium-high.  Sauté the chicken cubes until golden brown.  Add the garlic, ginger, and green onions.  Sauté 1 minute longer.   Return the broccoli, red chilies, and peanuts to the pan with the chicken.  Stir in "cooking sauce" and cook until sauce boils and thickens.  Remove from heat, serve over white rice.Download Recipe Here ...read more

Crudo of Scallops

A really popular dish that you are seeing popping up all over the United States on menus right now is crudo. Italian for raw—crudo is a fusion dish —similar to Japanese sashimi, but with Italian/Mediterranean flavors instead of Japanese. Recently I showed you a crudo of raw ahi tuna with Summer black truffles. Today we are featuring a crudo of thinly sliced raw scallops with extra-virgin olive oil, lime juice, cracked pepper, slivered mint & cilantro—and sprinkled with vanilla salt. [Sea salt that has been infused with a scraped Tahitian vanilla pod]. The unusual combination of flavors against the buttery richness of the raw scallops is delicious. Cherry Love

I get excited when Bing cherries come into season heralding the start of summer. My Great Grandmother Cassidy lived in a beautiful antebellum-style home near the state capitol in Olympia. The front yard was dominated by a gigantic Bing cherry tree. As children we used to go visit Grandma Cassidy and I couldn't wait to climb the stairs to the grand second level porch, and reach out and pick some juicy black-red cherries. My brothers and I would try and see who could spit the pits the farthest off the balcony towards the street below. Sadly, after Grandma sold the property to the state, her beautiful mansion was torn down--along with that huge Bing cherry tree, to make room for more state government buildings. Several years ago when I was chef of this beautiful restaurant Rix in Santa Monica CA, we came up with a great summer-y salad using Bing cherries--and we named it "Cherry Love". The salad is on our menu now, and is very popular with our guests. It consists of baby spinach leaves, feta cheese, sweet Walla Walla onions, roasted pistachio nuts, and a vinaigrette that we make from the cherries. ...read more
